Eating Healthy on a Budget One common excuse for n Eating Healthy on a Budget
One common excuse for not eating healthy foods is because they are so expensive. Here are a few tips that follow along with the idea of "Make, Don't Buy!" 1-Reinvent leftovers so they don't seem like leftovers (a way I have to trick my hubby into eating them!). Today we had leftover sirloin steak bias-cut in thin strips, rewarmed with slivers of onion and colored mini sweet peppers. Melted provolone cheese on top. So good! 2-Mason jar salads allow you to prep all your produce at once and store them in the fridge so they don't spoil before you are finished consuming them. Or even use a resealable bag or container with paper towels to absorb excess moisture. 3-When fresh produce is pricey, look for it in the freezer section instead. A great way to save money and fruits/veggies are frozen at the peak of harvest. 4-Soups are great for winter to warm you and fill you up without breaking the bank. And another great way to use up leftovers. Some of my favorites are: chicken pot pie soup, chicken or turkey tortilla soup, taco soup with hamburger, zuppa toscana. One tip: be aware of your pricey regular purchases that tend to be on sale at least once a month. Watch the ads to get these at a reduced price. Often stores run these specials as "loss leaders." If you're on a healthy eating "kick," what are you If you're on a healthy eating "kick," what are you doing so it doesn't break the bank? One thing I'm working on is figuring out substitutes to use in place of eggs (which are so pricey right now). For baking, I am using Flax Eggs and Aqua Faba (liquid from chickpeas/garbanzo beans). I also found a carton of only egg whites (no other ingredients) costs less than the equivalent amount of eggs. I can use two whole eggs and the egg whites from the carton to make an egg scramble or omelette for our family without missing the rest of the yolks.
